Deep purple hues rise from the nose, with big bubbles and a brisk mousse. Acidity is evident in the mouth, the intensity balanced with perfectly ripe and round, crunchy and crisp berries (black purple and blue), impressive and finishes with a lovely chalky freshness.

Estelle and Fabrice Soutiran, Patrick’s children, now manage the family estate located in the Grand Cru village of Ambonnay, in the heart of the Montagne de Reims on its southern slope. As independent growers and producers, they cultivate 3.10 hectares of vineyards in the communes of Ambonnay and Trépail, where Pinot Noir is the predominant variety, supplemented by Chardonnay. The estate has been in the process of converting to organic farming since 2024. In addition to a varied range of champagnes—blanc de noirs, blanc de blancs, and vintage champagnes—the estate offers two cuvées of ratafia.
