To the eye, it looks like a Provence rosé with its very pale color. Ripe white fruit, a few small red berries and, above all, sweet spices make up a very seductive, fresh and fleshy bouquet. The creamy texture reveals notes of custard and sweet licorice, with a welcome tension and acidity. It's more like a blanc de noirs than a rosé, but a great pleasure nonetheless. On the finish, the dosage comes to the fore, but only to add a touch of comfort.

Having taken over the family business in Rouvres-les-Vignes, on the Côte des Bar in the Aube region, Nathalie Falmet is now a true researcher, developing parcel-based cuvées and ageing in barrels and amphorae. The parcel-based cuvées simply bear the number of the registered parcel, allowing each grape variety to express itself. The estate covers 3.50 ha of Kimmeridgian clay-limestone soils.
