The palate is more incisive, with an acidic structure reminiscent of lemon peel, and a mineral, saline structure. The finish is chiselled, but not without breadth.

Having taken over the family business in Rouvres-les-Vignes, on the Côte des Bar in the Aube region, Nathalie Falmet is now a true researcher, developing parcel-based cuvées and ageing in barrels and amphorae. The parcel-based cuvées simply bear the number of the registered parcel, allowing each grape variety to express itself. The estate covers 3.50 ha of Kimmeridgian clay-limestone soils.
