A stunning nose of cherries, flowers, kirsch, lily of the valley and peony. The palate is quite disconcerting, with a chalky, almost crunchy feel, but no tannins. A wine of remarkable complexity, with a rustic side that will work wonders with a modern version of hare à la royale (without the giblets). It will also suit a pigeon reduced to blood with blackberry purée. A crazier option is red cabbage cooked like a steak with Cajun spices.

Long absent from our guide, Marie-Noëlle Ledru has kindly responded to our request and is once again taking part in our selection. This winemaker has nothing left to prove when it comes to winemaking practices: accompanying the vines, caring for them, letting them express themselves, favoring personal and direct contact between vine and wine, while preserving manual labor. Supply can't keep up with demand, and Marie-Noëlle is forced to limit her sales to former customers, especially as she prepares to retire. The wines have an extraordinary personality, sharp, frank and sometimes austere in their youth. But what a breed and what an expression of Pinot! A must-taste.
