On opening, a delicate nose of williams pear, chard apple, custard and orange blossom. On the palate, the texture is creamy and airy, the bubbles very fine, and the finish succulent with fermentation, fine salinity and a pastry resonance of breadcrumbs, cream, vanilla and a light touch of coconut. A nice lobster with vanilla cream to accompany it.
