This no-dosage cuvée boasts fine mousse, a nose of ripe orchard fruit with a touch of rhubarb jelly, and a juicy, mineral mouthfeel with flavors of fruit paste. The palate, salivating and very taut, is also marked by refreshing bitterness that makes you want to pair this champagne with roasted lobster, accompanied by pear chutney and rhubarb slivers.
