Here's a classic blend of pinot meunier (40%), pinot noir (30%) and chardonnay (30%) that deserves its name, as it's very well-balanced. It doesn't give itself away easily, offering very distinguished aromas marked by dried nuts, dried apple, hints of humus, smoke and moss. The approach on the palate is full of freshness with a certain roundness, combined with flavors of sweet spices, dried mango and redcurrant jelly. Highly drinkable and long on the palate, with a finish of fine bitters, this wine is a perfect match for poularde en cocotte with chanterelles and dried fruit (apple, mango, etc.).
