This champagne, made from 55% Pinot Noir from Aÿ and 45% Chardonnay from Côte des Blancs, is a beautiful deep gold color with silvery highlights. With extremely fine bubbles, it reveals a complex nose of white pepper, vanilla and white fruit (vanilla pear in particular). Creaminess, finesse and volume: nothing is lacking in the harmony of this juicy, complex wine. Drink now with shellfish or poached poultry, or in ten years or more.
