This pure Chardonnay, from a plot called "les Coulmets" in Mesnil-sur-Oger, is a rare wine produced in a limited edition. The 2013, with its deep gold color, comes alive with numerous creamy bubbles. The nose is complex: mint, lemon balm, lemongrass, hazelnut, butter, white flowers, exotic fruit, chalk... It's endless. The palate is unctuous, with bubbles that finely cover the palate, and the chalky finish betrays the very great terroir. A powerful, sensual Champagne to pair with a great shellfish, such as lobster with vanilla.
