This blanc de blancs has a clean, grayish-gold color. The effervescence is supported by a swarm of very fine bubbles. The nose is rich, carried by ripe white fruits and dried fruits. Pomme reinette, apricot Bergeron, pineapple, mango and sweet almond force an interesting aromatic complexity. Retro-olfaction works perfectly on the chewy palate, which imposes a chalky mineral touch. Serve as an aperitif, with tapas of Iberian pluma, mashed potatoes, short mustard jus.
