The nose is fresh, with lovely floral touches. On the palate, the champagne is still young, with aromas of fresh citrus fruit and an acidic, chalky texture. Grilled and spicy notes take over. This cuvée can wait many years in the cellar before expressing its full potential. It could then be enjoyed with a fine roast lobster to match its fine bitters.
