The palate is inviting, brioche-like, yeasty, marked by fresh butter and a finish of yellow lemon flesh. A great success for this atypical wine, but full of promise, to be discovered with Japanese cuisine.

François Diligent

In the 19th century, Hyacinthe Diligent already owned 2 ha of vines bearing nine different grape varieties, including pinot noir, pinot blanc, pinot meunier, chardonnay, arbane and petit meslier. In Buxeuil, Aube, François Diligent, a descendant of this long line of winegrowers, began champagnising his harvests in 1927 under the François Diligent brand. The range offers a variety of cuvées while retaining the authentic character of the old grape varieties. The "Grande Œnothèque" offers old vintages of great character.
