A beautiful golden color for this delightful cuvée. The nose is superb, aromatic, powerful and complex. Notes of mirabelle intermingle with those of yuzu, fresh then toasted bread, yeast and mushrooms. The richness of yeast autolysis is accompanied on the palate by a chalky freshness. A very fine wine that will sublimate poultry supremes in a mushroom crust.

In the 19th century, Hyacinthe Diligent already owned 2 ha of vines bearing nine different grape varieties, including pinot noir, pinot blanc, pinot meunier, chardonnay, arbane and petit meslier. In Buxeuil, Aube, François Diligent, a descendant of this long line of winegrowers, began champagnising his harvests in 1927 under the François Diligent brand. The range offers a variety of cuvées while retaining the authentic character of the old grape varieties. The "Grande Œnothèque" offers old vintages of great character.
