Very ripe fruit, dosage and vanilla notes appear first, while more toasty aromas emerge with aeration. Intense bubbles at first, then rapidly evanescent, support a markedly dosed body that somewhat masks the freshness of the structure. A flash of acidity, like a dash of lemon juice, awakens the finish.

In 2017, Francis Boulard moved to Faverolles-et-Coëmy, still in the petite montagne de Reims area, before taking a well-deserved retirement. Today, it's Delphine Richard who presides over the destiny of the 3 ha or so of organic viticulture since 2001 and biodynamic viticulture since 2017. Several cuvées are offered in extra-brut and brut nature (zero dosage). All vinifications are carried out in wood. A chambre d'hôtes is also available a short distance away to discover the region, the estate and its work.
