Winery presentation by Gault&Millau
Delphine Richard, daughter of Francis Boulard, runs the winery in Faverolles-et-Coëmy with the help of her son, Quentin. Together, they manage 3 hectares planted on the siliceous soils of the Saint-Thierry massif. The estate has been certified organic since 2009 and biodynamic since 2020. Special mention goes to the “Les Rachais” vintage blanc de blancs, sourced from a single plot—the first to be cultivated biodynamically. All winemaking takes place in oak barrels. A bed-and-breakfast, run by Mathieu, Delphine’s husband, is available just a short walk away for guests to explore the region, the estate, and its work.
