After the lemon-yellow color, it's lemon tart that reveals itself on the pastry nose (sweet cake spices and spicy poached pears). The bubbles are soft and airy, and the mousse velvety. Rich, ripe fruits (yellow and white fruits, blackberries) mark the palate, which unfurls a fine concentration of spices to attenuate the sensation of sugar. A champagne for the table that can also accompany a cheese platter or dessert.
