The color of this 1990 vintage has evolved, as it should, but remains brilliant. The superb nose opens with complex flavors of frangipane, mirabelle plum tart, hazelnuts, but remains both toasty and mineral. On the palate, the chalkiness is clearly present, with an ever-fresh citrus edge. The true ripeness of the grapes is evident, with candied and stewed notes, and the very fine evolution preserves freshness and minerality. A great champagne to enjoy with sophisticated cuisine, such as scallop ravioli with saffron and mimolette cream.
