Barrel vinification for this Pinot Noir parcel with a mature nose. The palate is creamy, dense, complex, rich, long and opulent. Freshness is preserved thanks to the silky, chalky texture provided by the terroir. Power seems restrained by salinity and minerality, minimizing the warmth of the plum brandy notes. The whole leads to a sapid, gourmet finish. Best served with sweetbreads, but also with a fine andouillette.
