Produced from old vines planted in 1969, this cuvée expresses the quintessence of its chalky origins, with an added soul due to the age of the vines. Here, the terroir of Aÿ dictates its law, erasing the notion of grape varieties. This champagne is a chalky, salivating fountain of youth that coats the palate and quenches our thirst with the greatest of joys. Try it with veal tartar and langoustines, mayonnaise seasoned with red Kampot pepper.
