Produced from the 2005 harvest of Avize's Grands Crus, this blanc de blancs, aged for 8 months and stirred on the lees, releases a sustained effervescence heralding a complex aromatic palette of spicy, licorice-scented stewed white-fleshed fruit, with hints of morels and truffles. The palate is invigoratingly chewy, fresh and chalky. An elegant champagne to enjoy as an aperitif or with pike-perch in a Puy lentil cream sauce.
