This is not only a parcel, but also a "clos", i.e. a vineyard surrounded by walls (the parcel is registered under the name "Derrière de l'Eglise"). This confidential cuvée reveals a luminous color and a very fine nose with notes of bergamot and citron. On the palate, it's a real delicacy! You can sense the sappy character of the ageing process, balanced by acidity and chalky minerality. An "old school" champagne, made without worrying about fashions, that has its place among the appellation's benchmarks. Enjoy with veal breast with mushrooms in a casserole simmered in the oven.
