Tasted only one month after disgorgement, this champagne expresses all of its force upon opening. Chalky salinity pleasantly takes precedence over the fruity and velvety flavours in the mouth, with a vinous note provided by the 10% red wine from Pinot Noir. Try it with a beef stew and paprika cream.

Boutillez Marchand

The family business operates around 7 ha, most of which are leased. The parcels, 97% planted with Chardonnay, are located on the Villers-Marmery terroir, a cru highly regarded by wine merchants. Pinot noir is now also given pride of place, with single-varietal cuvées. The domaine uses sustainable viticulture methods and offers a limited range of champagnes at reasonable prices, sold at the estate.
