It starts with a hint of old rose, tarte tatin, caramel, honeysuckle, then comes citrus and sea breeze in full force. The palate is in the same vein, a little vinous and weathered, quickly giving way to saline, salivating dynamism. Very well-balanced, long and energetic for raw fish, for example, or minimalist Japanese cuisine.
