This cuvée, from the 2015 Chardonnay harvest of the Chouilly Grand Cru, is the result of blending 40% reserve wines from corked magnums, of which 25% are wood-aged wines. The low dosage of 3 g/l brings out the best in its terroir of origin. The bouquet is lively, bringing out chalk, herbaceous notes, citrus fruit and peel, ripe apple and Timut pepper. The palate is generous and complex, very taut and evolving towards creamy, brioche-like textures where the sweet spices are better defined, supported by fine acidity. This characterful cuvée can be cellared for several years. With its great freshness and beautiful bitterness, it goes well with shellfish cooked with mild spices or curries.
