Prestige Restaurant His world and his future are his own. Jean-Luc Rabanel is constantly on the move, but then, isn't that the nature of any universe? A master of the seasons, of plants and animals alike, he composes his dishes with the freedom of tone and form that has always characterized him. Each spring gives him a new interpretation of asparagus, and each voyage, even in his own mind, is an opportunity to tackle other shores, as with his herb broth that sails the Mekong with (splendid) Mediterranean shrimp. Other flavors, too, with anchovies and a green curry of his imagination, balsamic-infused Mediterranean turbot highlighting delicious and simple button mushrooms, a very composed dish, with salsify tagliatelle and wild fennel. This seasonal menu is a hustle and bustle, a roar and a bang. Smoked veal fillet with beet hay and vegetable curry prepares the palate for exciting desserts, low in sugar, fruity or icy, always fresh. At a time when staff are in short supply, RABANELI's performance also means being able to count on a tightly-knit, motivated team for its two establishments, with the loyal Mehdi providing top-quality service with distinction and tact, and managing a very extensive, attractive and cutting-edge cellar, particularly for Languedoc wines.
