In the kitchen, experienced chef Jean-François Musset offers a creative, well-mastered plate: roast quail fillet with thyme-lemon shortbread, cod with hazelnut cap, spinach, guacamole emulsion, Rossini-style pigeon, Jerusalem artichoke espuma, Aquitaine ebony caviar.
