Chef's Restaurant Jean-Baptiste Ascione is as well established as ever in this corner of Batignolles, with his table as warm as it is meticulous. Conviviality does not preclude technique, distilled into plates between the main course and the tapas, which are shared by two or more, little traveling moments where the chef confidently combines detail and gourmandise. For example, small agnolotti with mushrooms and cow's tomme espuma, carbonara risotto with aged parmesan and guanciale, braised lean meats and spinach purée with ginger, pear and preserved lemon, a rack of roast pork with pumpkin purée and lemon gnocchi. Good choice in the cellar.
