Continuity for this house in the center of Armentières, Nature having become Osmose. The new couple at the helm, members of Nicolas Gautier's former team, have taken up the torch under a different name. Florine Dewulf and Baptiste Avetand apply the same good practices, with an experience centered on the various multi-course menus, and bring to life seasonal and local products such as herring and mackerel from the Boulonnais fishery, beet and carrots from the sands, or poultry from Licques. All with a touch of Asian influence, with fragrant, seafoody broths, or the presence of wasabi in the coffee dessert. You can feel the passion for doing things well in the kitchen, with its meticulous presentations, and the desire to make its mark on the region's gastronomic landscape.
