Formerly of Nicolas Gautier’s restaurant, Baptiste runs the kitchen while Florine manages the dining room. The seasonal menus range from €39 to €96, featuring delightful combinations such as a starter of ginger, sea bream, broccoli, lobster, and sorrel, followed by monkfish with Sichuan pepper, eggplant, and coffee; a duck dish with rhubarb, dill, and sand carrots; and a dessert featuring cherries, sucrine lettuce, apple, and verbena. Excellent food-and-wine pairings.
