Just outside Lille, past the bypass, this “Marmite de Pierrot” is a well-known institution among the people of the Nord region, renowned for its regional specialties. Since 2017, Pierre Coucke’s estaminet has been run by Fréderic Vervisch and Sandrine Lemaire, who faithfully carry on the traditions. Don’t miss the ramekin of andouillette with mustard seeds, pork brain meunière, marrowbone, veal tongue with vinaigrette, potjevleesch, breaded pig’s trotter, beef tenderloin with Maroilles cheese, a “dame blanche,” and hot chocolate.
