His pâté en croûte, perfect eggs in a variety of variations or the cauliflower velouté of the moment will precede the veal sweetbreads with morel sauce or a fine vol au vent, unless you opt for the judicious selection of meats or scallops in shell, choosing the homemade garnishes on the side.
