Sponsored Grégory Noléo, originally from the West Indies, is well versed in the culinary arts of the islands, and has a particular fondness for the cuisine of Hawaiian "mamas". In Clichy, near the town hall, he has created a "little shack" called Mama Hilo, Hilo being a coastal town on the island of Hawaii. In this uncluttered, natural-style restaurant, the poké bowl is king! This emblematic Hawaiian dish is traditionally made with coconut milk-scented rice sprinkled with sesame seeds, cubes of tuna or salmon marinated in lime, coriander, red onion and soy sauce, topped with mango, pineapple and pomegranate, for example. Grégory offers 5 types: two with tuna, two with salmon and one vegetarian. For a sweet touch, let yourself be tempted by Haupia, the Hawaiian festive dessert, a coconut milk, cinnamon, vanilla and lime cream. Grégory's delicate reproduction of the traditional essence of Hawaiian cuisine is a delightful discovery, full of originality and exoticism.
