Gourmet Restaurant This former 19th-century building provides the ideal setting for a large brasserie, perfectly situated on the Canebière. Chef Noël Baudrand takes advantage of the Mediterranean-inspired setting to adapt his menu, combining bistronomy and regionalism. We're tempted by Mediterranean mackerel tartare, arugula coulis and wasabi ice cream, a section of snacked hake, Jerusalem artichoke and onion sauce, a daube of seven-hour beef chuck and roasted parsnips, and finally a dessert of citrus fruits perfumed with fennel in a gingerbread crust. Good service.
