Remarkable Restaurant We've been following and encouraging Baptiste Poinot since he set up shop fifteen years ago and was named Grand de Demain in our 2010 edition. Every year, the chef embellishes his house and moves it forward. His small team follows in his footsteps, with varying degrees of efficiency (the service department was a bit overwhelmed last time), but he always succeeds in winning people over, with his values and strength of conviction. Menus are in "carte blanche" format, so you'll have to sign a blank cheque (from €60 to €110) when you enter, with the usual arguments ("give free rein to creativity" etc.). Wine enthusiasts will also be a little frustrated (no cellar book, everything is by word of mouth, as you're told from the outset!). Fortunately, we come across some very fine dishes: smoked and flambéed asparagus, anchovy siphon and nasturtium sorbet, marigold petals, chive flowers and arugula, trout fillet, gnocchi, broccoli and sour sauce, Ségala veal knuckle, white asparagus, shallot confit, date cream and veal jus with cardamom, but also, however, others a little more forgettable. A cellar with a broad view of the Rhone Valley, well recommended.
