Chef's Restaurant Baptiste Poinot is multiplying his adventures, offering in addition to his gastronomic table (Flaveurs, 3 toques) a wine bar-style address in the heart of the old town. The tone is more relaxed, simple and regressive, with a beautiful cellar and cheerful plates, where the chef's talents serve up cuisine for every day, with carefully chosen products, following a seasonal and locavore spirit. Summer lends itself to compositions where the raw is preferred to the cooked, without neglecting either the workmanship of the product or the sense of presentation. Dishes on the slate include: a beautiful tomato soup, Isère mozzarella and croutons; veal quasi carpaccio, herb mayonnaise and crunchy vegetables; Archiane trout, timut pepper cream cheese, pickled cucumber and citrus zest; vanilla panna cotta, strawberry compote and verbena crumble. In the glass, René Bouvier, David Reynaud, Bernard Fouquet, Bernard Gripa and others. Two toques this year, also because the closure of Flaveurs for renovation allowed Baptiste to concentrate more on the bistro.
