Pamela and Erwan Houssin have created a bistro to complement their gastro (Le Grand Cap), two paradises being better than one. It's understandable that a location like this should be reserved for just one establishment, when there's a way of sharing this happiness with an inevitably wider clientele - even if the view from the ground floor isn't the same as upstairs - who come to watch the sun set over the Grande Bleue before nibbling on really good produce, simply processed, but by an excellent chef. This is how we treat ourselves to platters of fine charcuterie and cheeses from Xavier's in Toulouse, foie gras compressed with rivesaltes or home-smoked Isigny salmon, risetto with mussels and chorizo marinière with shellfish and basil, or lamb shoulder confit with polenta, taggiasche olives and green asparagus from Puichéric, and equally clever desserts, such as guanaja chocolate with Toulouse violet. A fine cellar that benefits from the gastro's excellent selection, and attentive service.
