Gourmet Restaurant Enjoy this tradition as a precious commodity, offered by a couple of kind-hearted innkeepers. With their generous casseroles, they've been delighting the Ariège countryside for decades, attracting visitors as far afield as Toulouse with their foie gras and cabbage soup, prepared by Anne-Marie Sentenac. Full and happy, you'll be thanks to so many goodies: confits, prime rib with porcini mushrooms and the must-try Norwegian omelette, all served in a rustic simplicity, under the beams, that touches on the rudimentary and the truth.
