Chef's Restaurant In the warm rooms of this solid Vosges foothill institution, celebrating over 100 years of conviviality, a meal is always a celebration. All generations of the Koenig tribe are on hand to take care of guests: the chef's mother, Marie-Thérèse, has the gift of spreading happiness around her. In the kitchen, Matthieu is the guardian of tradition. It's easy to see why they have such a loyal following, with their generous €40 menu: after being served a fresh endive salad enriched with smoked trout as an amuse-bouche, we tried the salmon roulades with organic bibalakas from the Krust farm, accompanied by a cabbage salad a little too fragrant with cumin and topped with a wasabi-yuzu cream; the whole thing is fresh and aperitif. The thick, fresh and shiny skrei back is roasted with precision and surrounded by a very generous garnish. Last but not least, the vanilla pear tartlet takes the form of a disk of fresh shortcrust pastry, and is topped with a creamy and fragrant pear pieces, while the caramel ice cream seemed a little hard to us. It's also possible to try a great classic such as the hare à la royale, a little less stewed than elsewhere, but quite tender, enhanced by a beautiful slice of pan-fried foie gras and highlighted by a very gourmet sauce. The cellar includes some fine wines, such as Tollot-Beaut's Chorey-les-Beaune 2021 and Josmeyer's Gewurztraminer Les Folastries.
