Chef's Restaurant Now entrusted to Pierre Marty, who has been in charge for several seasons now, the Coquillade's flagship table (alongside La Cipressa, which offers Italian cuisine from April to October, and the Provencal bistro Les Vignes) is only available from €150, with a four-course menu featuring a Jerusalem artichoke and black truffle tartlet, shrimp with quince and aïoli, bass a la plancha with citrus and young leeks, and dark chocolate and laurel soufflé (desserts by Aurélien Trousse).
