Thomas Gallardo has never changed his approach: produce, always produce, always produce, preferably regional and seasonal of course. But behind the modesty he displays lies a talented chef with excellent technique and a real creative touch: crisp, melting endives, endives broth with coconut milk and vanilla and crispy tartine, grilled scallops en papillote, leek and carrot tombée, lemon, capers and farmhouse bread, warm chocolate crèmeux with raspberry heart, raspberry sorbet, salted butter caramel coulis in a wisely priced package.
