He feels at home in his village bistro, after having experienced the splendor of a mansion with Madame de Sévigné. But to see him so beaming, so full of projects, after also having offered the village a new bakery, you can see just how much this "kitchen house" puts him in his element. Yes, Julien Allano is happy, happy to please, happy to be in direct contact with his guests, happy to talk about his cuisine, his joyful mix of Mediterranean-themed dishes, whatever the shore. A small room, a counter, live cooking, which is not improvisation, but the result of knowledge and technique, Ju''s cuisine is nothing short of exhilarating. For grown-ups, knowing what you're eating would be a plus, and choosing even more so. But the three toques are there, and the wine is good, chosen from the surrounding vineyards with the right winemakers.
