Gourmet Restaurant Olivier Arlot is no stranger to music and the local clientele. Opposite the Halles, he has put in place a high-performance team with the regulation three-day beard to provide an efficient, contemporary regional bistro score. The €51 menu may be steeply-priced, but its meticulous service leaves nothing but good impressions, with a focus on the product, such as butternut in all its states, smoked burrata and roasted almonds, or pike-perch in a chorizo crust, gnocchi, spinach and beurre blanc. Even if a few details could be improved, we appreciate a certain originality ("around lemon and fennel" for dessert) and the quality of the service. A fine wine list, with excellent references in the region and elsewhere: Loire Valley (La Taille aux Loups, François Chidaine, Vincent Carême, among others), Burgundy well represented, and a few local beers.
