Gourmet Restaurant There's been no let-up in this establishment's progress over the past year: chef Arthur Viard is keeping a firm grip on the helm, just as his €40 menu is holding up well. In a pleasant, if somewhat noisy, setting, the service is professional, with a hint of over-stepping, the pace slowing as the number of diners increases. The plates are well constructed, with a willingness to multiply the ingredients in titles that are a tad pompous, but which turn out to be rather well thought out: three-cooked mackerel yakitori style, spaghetti squash maki, Hokkaido green squash mousseline, beurre blanc and blood orange condiment, lamb confit massala style in a bread crust, tandoori roasted carrot with kalamansi condiment and crème de fanes, carrot-vinegar rice cromesquis, port-roasted Solliès fig croustade, ganache montée and warm orange blossom sabayon, fig leaf ice cream. A good, varied wine list, with no great surprises, but coherent nonetheless.
