Sponsored Behind its pun-like name, chef Paul Guény's restaurant makes a very serious promise: vegetarian cuisine for all. "I reinfuse traditional cuisine from France and elsewhere, playing with combinations of textures and flavors. All to surprise and challenge my customers," confides Paul, who has been assisted by his parents Véronique and Philippe for the past eight years. He's surfing the "raw food" trend, a healthy cuisine based on fruit, vegetables (no meat, fish or dairy products) and aromatic herbs from his own garden at Mas St-Michel, in Cabannes-en-Provence. Complemented by juices, floral waters and natural wines, the menu changes every month, with suggestions such as beet sashimi or vegetable foie gras, where porcini mushrooms replace duck liver. Small dishes to share... or not! Another of Les Baux Jus's assets: adjacent to the restaurant, a boutique offers a range of essential oils from the "Instinct Aromatique" brand, also homemade. Last but not least, once a month, Paul gives classes in his very special cuisine to groups of ten or so.
