Remarkable Restaurant In the heart of the superb Domaine de Manville, in Les Baux-de-Provence, you'll find l'Aupiho - whose name means "the Alpilles" in Provencal. The place is immediately enchanting: a large, elegant house, a soothing fountain, a warm atmosphere and that extra touch of magic that sets in when night falls. Dinner here is a completely free choice: four courses to choose from the menu, with the option of replacing dessert with a main course. A flexible, contemporary formula, true to the spirit of Belgian chef Lieven van Aken, who composes seasonal cuisine nourished by the estate's vegetable gardens. Two slightly contrasting experiences (the first half-hearted, the second very favorable, maintain the current rating). The dishes are straightforward and easy to understand, with the emphasis on taste above all else, supported by sauces full of character - the grilled blue lobster with seed tomato sauce, with its uncommon intensity of flavor, is a striking example. Vegetables are a major protagonist of the moment, in particular the butternut squash from Provence - cooked like meat, with raw squash piccalilli and shiso sour sauce, brilliant in precision and contrast. The dessert rises to the same heights: Madong chocolate chaud-froid - celery root, celery stalk and yellow lemon, fruity olive oil and Madagascar vanilla, a bold and harmonious finale. Precise service, without stiffness, accompanies this culinary tale with elegance, while the sommelier orchestrates rare pairings from among some thirty proposals. As for the cellar, it gives pride of place to old vintages from the local vineyards, while opening wide to other horizons.
