Chef's Restaurant This superb concrete, steel and glass building was destined to host a gourmet restaurant. With its large bay windows overlooking the Parc Micaud and the banks of the Doubs, the dining room is already a sight to behold, aided and abetted by the dishes of Italian chef Francesco di Marzio. Having worked at the Dame de Pic in Singapore and more recently at the Château de Germigney, the chef champions a fusion cuisine of meritorious technique, combining his origins and his travels. The four-course menu includes char gravelax, beet, pesto and caviar; acquarello risotto with green asparagus; stuffed rabbit, mussels, salsify purée and sea and land salad; pistachio financier, kiwi, basil ice cream and Greek yoghurt. Good service.
