Gourmet Restaurant Jean-François Sadonès, qui fut un chef remarqué lors de son passage à la Parenthèse à Jouy (12/20 en 2017) a repris les cuisines de cette jolie table chartraine, qui conserve son charme intime et montre une carte de saison qui s'exprime bien dans l'assiette : silure du Perche et endives braisées, suprême de pintade de la Belvindière chou-fleur rôti au miel jus perlé à l'ail, entremets citron et praliné.
