Chef's Restaurant The traditional restaurant industry suffers from a stilted, old-fashioned style that no longer corresponds to today's cravings for lunch in the city. Despite this, this almost mythical place, which was Guy Savoy's salon for almost thirty years, still has a few assets, starting with Rudy Langlais' fine, precise cuisine - still very Japanese - and the very good return on a €68 lunch menu, which is the best deal. After the appetizers, including the excellent cold chawanmushi with shimeji and dashi, the lean tartare with discreet wasabi, white sesame and chive sauce, the grilled and roasted yellowtail on crispy skin, grated yuzu, vegetable broth with kale and mushrooms are good examples of a cuisine that has become rather predictable and limited in scope: a few dishes form the backbone of a mini-card and menus repeated over the course of several weeks, while the pastry chef devotes herself to a single dessert, pavlova, which evolves according to the fruits of the season and is humorously presented as "the signature dessert" (although among the mignardises is an excellent chocolate bouchée). The wine cellar is rather well varied, with a solemn commentary, but the choice by the glass is rather limited and very expensive.
