Chef's Restaurant Over the years, with growing success and improved overall service (particularly in the dining room, with fewer place settings and greater comfort), the table at our winner of the Dotation pour les Jeunes Talents has inevitably become gentrified. At nearly €70 for the lunch menu, and over €100 for the four-course discovery menu, we're a long way from the prices charged in the Yucatan, but at this price, Mexican chef Enrique Casarrubias offers a very fine gustatory journey to a clientele delighted by this first-class experience: a beautiful combination of octopus, black pudding and recado negro, a magnificent saint-pierre with a delicate purée of watercress and cima di rapa, and an admirable signature dessert, a magical marriage of avocado, lime, white chocolate and mezcal, a dish that evolves each year in small steps and achieves the feat of being light and refreshing. A sharp cellar with reasonable coefficients.
