Gourmet Restaurant Where Claude Colliot enchanted us for so long, a young chef, Guillaume Campion, has set down his knives in this privileged environment - calm Marais, zen-like setting behind the almond-olive facade, beautiful atmosphere created by two entrepreneurial friends in a setting where wood dominates, and who chose Guillaume for his culture and experience (having notably passed through Lancaster and Grand Véfour). Guillaume's menu is pleasant and seasonal. A great experience in the evening for €45, with chorizo mussels, chuck with red wine or leg of lamb with the same accompaniment of French peas, chocolate brownie with chocolate sauce and hazelnut. A promising start, a wine list still under construction with some good references (Fosse Sèche, Tardieu Laurent...) and Thévenet's Bongran Quintaine by the glass.
