Gourmet Restaurant Where Claude Colliot enchanted us for so long, in a privileged environment - calm Marais, zen setting behind the almond-olive facade, beautiful atmosphere - a new place created by two entrepreneurial friends. After Guillaume Campion, who got off to a good start for a few months, a young chef, Magali Martini, took up the torch with vigor and modern, well-inspired recipes: octopus in court-bouillon and Bayonne ham, skate wing with sorrel oil and sweet potato purée, creamed fish stock, seasonal dessert on shortcrust pastry, apple ice cream with almond cream and quince paste... A promising start, a wine list still under construction with some good references (Fosse Sèche, Tardieu Laurent...) and Thévenet's Bongran Quintaine by the glass.
