A native of Bain-de-Bretagne, Stéphane Haissant has built a solid reputation over the course of 25 years of experience in haute cuisine. After honing his skills at the Lion d’Or in Janzé, hetrained under legendary figures such as Gaston Lenôtre and Michel Guérard before joining prestigious Parisian restaurants, from Alain Senderens’ Lucas Carton to Le Bristol. The crowning achievement of his career: at just 30 years old, he took the helm of the kitchen at the legendary Tour d’Argent in Paris.
At Loca Café, delightful seafood-inspired cuisine
In May 2012, he chose to reconnect with his maritime roots by taking the helm at Les Sept Mers, the restaurant at the Hôtel du Nouveau Monde in Saint-Malo, which he ran for eight years. After a stint as an international consultant in Asia and Europe, he reached a new milestone in 2021 by opening his own restaurant, Loca Café, in Granville. There, he now serves eco-friendly, light, and creative cuisine that highlights local and seafood products from the Bay of Mont-Saint-Michel.
